Chef Madrid is the chef/owner of “Taste of New Mexico” Food Truck & Catering. After a traditional New Mexican childhood of food, family and culture; Chef Gabe found his calling in the culinary arts.

Robson was born and raised just outside Mexico City. He moved to San Antonio before coming to Scottsdale to attend the Scottsdale Culinary Institute. After graduation, he worked with James Beard Award winner Robert McGrath. Worked under Matt Carter at Michael’s at the Citadel. He opened Arcadia’s La Grande Orange in 2002 as its executive chef and built out the company’s additional concepts, including Chelsea’s Kitchen before embarking on his own. He is currently in the process of re-opening the much anticipated return of Gallo Blanco cafe in the historic neighborhood of Garfield on 10th and Pierce.
