TASTE! OF NEW MEXICO
Chef Madrid is the chef/owner of “Taste of New Mexico” Food Truck & Catering. After a traditional New Mexican childhood of food, family and culture; Chef Gabe found his calling in the culinary arts.
In 2002, he graduated with honors from the Scottsdale Culinary Institute. Soon after, Madrid was working in Las Vegas at Chef Bobby Flay’s Mesa Grill. Thereafter, Madrid was then offered a position in Flay’s new Bahamas-based Mesa Grill. In May 2008, he moved to NYC, working at the Manhattan Mesa Grill. In 2010, Chef Gabe was recruited by Carmine’s NYC. He then moved to Washington, DC for one year to open the Carmine’s Nation’s Capital Location in the Penn Quarter. In July 2011, Chef Madrid headed back West to Las Vegas to work aside the world-renowned Chef Jose Andres at Paleo.
In 2013, Gabe moved to Phoenix and was the Chef for the San Francisco Giants Spring Training Facility, then the next year was the Chef for the Chicago Cubs Spring Training Facility. He then started working at M Culinary, under Chef Michael DeMaria. For the past three years, Chef Gabe has been working as a Personal Chef and Caterer in Las Vegas, Albuquerque, Las Cruces and Phoenix.
